Hot Chilli Dip

This jar of vibrant dipping sauce is made from cayenne pepper. Somehow, it paved a way for itself and is taken really seriously. The flavours have a hint of ginger and grape must. Chilli dip goes well with wedges, tortilla chips and surprisingly with bread.

Chives in Coconut Oil

How it began… I always have my coconut oil in my kitchen, they are great for stir fries and jollof rice… yes, the Nigerian Jollof rice. They are a staple in my kitchen. Folarin’s niece visited us in December along with her fiancé, they were going to have a winter wedding. As is the custom, I made them something to eat. For me, It was a tussle between pasta and jollof rice. For them it wasn’t a competition. Jollof rice was the only option. So Jollof rice is great any day of the week. The spices are thyme, curry and sometimes, fresh ginger blended in tomatoes and sweet peppers. You then fry the blend in some oil, I used coconut oil. The aroma of coconut oil filled the house as I started to prepare the base sauce, it just reminded me of being back home. The coconut oil brings another depth to an already delicious meal and my guests were totally blown away by it. When she asked me why my Jollof rice tasted different my answer was simple ‘Coconut Oil’. Of course she helped herself to some more and grabbed my Coconut oil to go.

Chilli Mild

This is one of those paste’s that you have in the spice cupboard to enjoy as a dip. My colleague Florence loves the chilli crushed but has always asked me to make her something a little less spicy. Life at work was too busy so I asked Florence to make do with the chilli crushed. It was when I got other requests for a less spicy brand that I decided to work on this project. With Chili mild you get a burst of sweet chilli flavors in your mouth then that little kick behind your palate that does not last long enough to make you scream from the heat. I really love the sweetness of the chili and that crunch in your mouth as you bite into the paste. Made with sweet peppers in sunflower oil, Chilli mild is for the milder palate. You can use as a dip or as a side. It also works well as a roast potato marinade .
